It has one of the highest protein levels (on average, 28 gr. per 100 gr. of edible flesh, compared with 19-22 gr. for lean beef or boiled ham).

Most of these proteins are hydrolized, which means they are pre-digested, making this product particularly suitable for the elderly, children and all those who have problems with digestion. |

It contains a high level of free-form amino acids, including branching amino acids, that make Culaccia ® aged for 400 days or more a valuable source of energy for young people, athletes and convalescents. |

It is rich in vitamins; in fact, just 100 gr. of the product provide the entire daily requirement of B1, 1/3 of that of vitamin B6 and 25-30% of vitamin PP. |

It also has a high mineral content. 100 gr. of Culaccia ® contain 1/4 to 1/6 of the entire daily requirement of phosphorous, potassium, iron and zinc. |
Fat

Muscle fat content is just 3-4 gr. per 100 gr. of product, making it comparable to that of lean beef and chicken.

The cholesterol level is only 70 mg. per 100 gr. thanks to the strict breeding criteria utilized. Culaccia ® fat is primarily unsaturated and fully in line with current nutritional guidelines. |

Its main components are oleic acid (the same as in olive oil) and linoleic steric acid, both important in the prevention of heart disease.
